Potatoes maintain their best flavor and texture when stored in a dry, cool, and dark place. It’s important to keep them unwashed until just before use, as washing introduces moisture that can encourage spoilage. Storing potatoes in the refrigerator is not recommended, as the cold temperatures cause the starches to convert into sugars, resulting in a gritty texture and an overly sweet taste.
Refrigeration can also cause potato skins to darken prematurely when cooked, affecting their appearance. For ideal storage, keep potatoes in a well-ventilated area, like a paper or mesh bag, to allow airflow while protecting them from light exposure, which can cause greening and the development of solanine, a potentially harmful compound.
